Many of the regular users of social networks have already been frightened by watching videos in which a knife approaches a cute little animal. Relief comes with surprise: it’s a cake! In addition to the animals, a series of curious objects featured in amusing videos in which you had to guess what a cake was or wasn’t.
And the different cakes continued to appear, conquering the internet, through videos and photos, and reproduced and brought to the party tables. The isolation and the inability to have big celebrations changed the focus of the birthdays.
The décor and the varied menu, elements in which most people invested the most, were no longer so relevant without the presence of the guests. The cake, practically an essential element at every party, has been elevated to the role of great protagonist.
Pastry chef Isabela Vitorino da Silva adds that, in addition to the cakes that attract a lot of attention, customers have preferred decorations that can be eaten. “Those cakes full of stuff, like paper and plastic ornaments, aren’t very nice. People want something nice, but no waste, they want to be able to eat the whole cake.”
Despite trends like square cakes, marbled icing, and pool cake, among others, birthdays’ biggest wish is personalization. Isabela says that the cakes that represent the celebrant’s personality are almost unanimous.
“It’s funny because, within the trends, people want unique and unusual things. A client, a horror movie fan, asked me for a macabre cake, with glass splinters and very bloody,” he recalls. There are, of course, the secrets of every baker, but Isabela reveals that the unusual and different decorations are usually made with decorated cookies and isomalt, a sugar-like sweetener.
In the world of icing there are ingredients such as butter cream, which allow you to paint the cake like a canvas and create real works of art. Edible flowers and different pastry nozzles, such as chuveirinho, bring even more varied effects. And the coolest? The parts of the cake that look like decorations, fabrics or papers, are totally edible, as well as being very tasty.
Cake designer Maria de Fátima explains that the glass effect is most often used in cakes in Brazil. Those with 3D effect are among the most requested by brasilienses. She believes that the most diverse desires are the result of a desire to break out of uniformity inspired by the culinary show boom.
Is it a cake or a meme?
During the pandemic, while the holiday celebrations were on hold, many people used candy to make friends feel special. A traditional dessert, on the other hand, would be a waste, most people were isolated or with few family members.
It was then that bentos and minicakes became big hits. Some of them imitated traditional sweets in miniature versions, more elegant and classic gifts. The most creative are betting on customization, and meme cakes have become a fever.
Who hasn’t seen at least one friend or relative share a cake with a doll and a funny or ironic phrase? And since Brazilians are known as the big winners of the “memeal wars” on the Internet, memes weren’t limited to bento cakes and appear in family-friendly desserts.

Among the most imaginative are the cakes with 3D decorations, those that seem to defy gravity, and the glass cakes, which look like they are made of glass. According to the research and trend platform Pinterest, the demand for 3D cakes grew by 60% in 2022.
Gravity-defying cakes have seen a 70% increase, and searches for bubble-decorated cakes have increased by 55%. In her blog Confeitaria Online, cake designer Simone Reis highlights Shaggy Cake, the conceptual level cake, granilite cake and Brushstroke.
